2 pounds Beef(your choice), cut into 1-in. cube
1/2 cup Green olives
1/2 cup Orange juice
1/2 cup Pimientos
2 Garlic clove(s)
1 tablespoon Onion(s)
1 cup Tomato juice
1 cup Red wine, dry
4 tablespoons Olive oil
1 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Oregano, dried
Combine olives, OJ, pimentoes, garlic and onion. Puree in food processor until smooth.
In a skillet, heat the oil and when hot brown beef cubes.
Add beef to a slow cooker and cover with the puree, add the tomato juice and wine. Mix in the salt, pepper and oregano.
Cook for the day. Cook it until the meat is tender. You may have to add a cup or so of water.
