1 cup Onion(s), chopped
1/2 cup Celery, chopped
1/2 cup Red Bell pepper(s)
1 tablespoon Olive oil
2 large Egg(s)
1 tablespoon Creole mustard
2 teaspoons Worcestershire sauce
2 teaspoons Hot sauce
5 tablespoons Cajun seasoning
1 1/2 cups Vegetable oil
1 1/2 cups Bread crumbs
1 pound Crab meat
1/2 cup Flour
1/2 cup Milk
Heat Olive oil in large skillet. Saute trinity (onion, pepper and celery) until tender…..about 3 minutes. Remove and cool.
To make the mayo….in a food processor, add 1 egg, mustard, Wooster sauce, hot sauce and 1 tablespoon seasoning. Blend for 15 seconds. With processor running, slowly add 1 cup of the oil. Blend until thickened.
Combine the mayo, trinity, bread crumbs and 1 tablespoon of seasoning. Mix well. Gently fold in the crab meat.
In a bowl, combine flour with 1 1/2 tablespoons of seasoning. In a separate bowl combine milk and egg, mix well. In a final bowl, add remaining 1 cup of bread crumbs and remaining 1 1/2 tablespoons of seasoning.
Shape meat mixture into 8 patties. Dredge in flour, then egg wash and dip in bread crumbs.
Heat the remaining 1/2 cup of oil over medium heat. Fry patties for about 4 minutes per side. Drain on paper towels.
To serve, place 2 tablespoons of White Remoulade Sauce on plate and place patty on top. Drizzle cream sauce on top.
