Here in Fort Wayne there is a chain of locally owned Italian restaurants that have the name Casa in them. They make a tremendous salad that is a variation of the classic oil and vinegar dressing so popular in Italian households. My daughter Kate absolutely loves this salad and insists I make it whenever she gets to pick the meal. Like many other salads I have made, you really need to have all the ingredients including the different types of greens and the anchovies.
6 Anchovy fillet
2 cups Olive oil
1 cup Wine vinegar
1/4 cup Cornstarch
2 tablespoons Sugar
1 tablespoon Salt
1 1/2 teaspoons Pepper
1 1/2 teaspoons Garlic powder
1 teaspoon Oregano
Add all ingredients to blender except the oil.
Blend and gradually add the oil while blending.
To make the salad:
Use a mixture of iceberg and romaine lettuce
Add 1 bell pepper, preferably red for the color and sweetness.
Add chopped green onions, green part and all.
The following shredded cheeses must be added; parmesan, mozzarella and provolone.
Some crumbled bacon bits.
Top with croutons.
To this salad mixture add the dressing and toss.
