This is the recipe I use in my award winning chili. You can buy these chile’s already dried at most supermarkets and definitely any Mexican grocer. They will need some additional drying however and then you can use a coffee grinder to make into a powder.
12 Anchos
10 New Mexico Chiles
12 Chilis de Arbol
4 tablespoon(s) Cumin seed
2 tablespoon(s) Oregano, dried
Roast the cumin seed in a skillet over medium heat until it begins to smoke slightly.
Combine all ingredients and grind into powder.
You can add some chipotle powder for smokiness.
Makes 2 cups of a fine grind chili powder.
