Normally I smoke my brisket, but I realize not many have the luxury to do that. So, here is a little simpler method. You can use any cut of beef roast with this.
4 pound(s) Beef brisket, flat portion trimmed to 1/4 inch fat
3/4 cup Brown sugar, dark
3/4 cup Chili sauce
3/4 cup Ketchup
1/2 package Onion soup mix
1 bottle Beer
15 small Potato(s), red
1 1/2 pound(s) Baby carrots
Combine sugar, chili sauce, ketchup and onion soup mix and gently stir in beer.
Heat some oil in fry pan and sear brisket on both sides.
Arrange taters and carrots around beef and then add Beer mixture.
Cook for 3-4 hours at 325º, basting occasionally.
You can also let this cook all day in your slow cooker.
