Good old fashioned banana bread. This is just a basic recipe but one that is moist and tender.
2 cups Flour, all-purpose
3/4 cup Sugar
3/4 teaspoon Baking soda
1/2 teaspoon Salt
1 1/4 cups Walnuts, chopped
3 Banana(s), mashed
1/4 cup Yogurt, banana flavor
2 large Egg(s), beaten
6 teaspoons Butter, melted
1 teaspoon Vanilla extract
Pre-heat oven to 350º. The greasing instructions for the pan depends on the type you use. Use a regular 9 X 5 X 3 loaf pan. If using a non-stick pan, grease and flour bottom and sides. If using a regular pan, grease and flour bottom only.
Combine all dry ingredients including walnuts.
Mash over-ripe bananas and then add yogurt, eggs, butter and vanilla.
Fold wet mixture into dry mixture. Do not over mix, but fold gently until just combined.
Pour into greased loaf and cook for 55-65 mins.
Cool and remove from pan after 5 mins. Continue cooling on a wire rack.
