Habanero peppers are very easy to find these days. Most major supermarket chains carry them so take advantage and whip up this hot sauce. It keeps forever and you can add it to BBQ sauce or salsa and it will not affect the flavor…it just makes it really hot, Hot, HOT!
1 small Onion(s), chopped
2 clove(s) Garlic, chopped
1 tablespoon Oil
2 medium Carrot(s), chopped
2 cup(s) Water
15 – 20 Habanero chiles, minced
3 tablespoon(s) Lime juice, fresh
3 tablespoon(s) White vinegar
1 teaspoon Salt
Saute onions in oil until soft.
Add carrots and water, bring to boil and cook, uncovered, until carrots are soft.
Remove from heat and add habs, lime juice, vinegar and salt.
Puree in processor until smooth.
Makes 2 pints.
