Kurt really loves blueberries and when they come in-season we whip up a large batch of this stuff. Great on pancakes, waffles, cheese blintzes, crepes,…and of course ice cream!
1/2 cup Sugar
1 tablespoon Cornstarch
1 teaspoon Cornstarch
1/4 cup Water
1/4 cup Corn syrup, light
2 teaspoons Lemon juice
2 cups Blueberries
Combine water and cornstarch in 1 quart casserole.
Add water, syrup, lemon juice.
Stir in blueberries. Microwave on high 4-6 minutes. Stir every 2 minutes.
