A Christmas Tradition. Why limit these beauties to the Holidays? Make them year-round and the kids will love you!
2 cups Peanut butter, creamy
2 – 3 cups Confectioner’s sugar
1/2 cup Butter, softened
3/4 teaspoon Vanilla extract
4 cups Dipping chocolate
Cream butter until very light yellow.
Add peanut butter and vanilla and mix well.
Add 2 cups powdered sugar and mix slowly to incorporate well. Taste it to determine if it is sweet enough. If not sweet enough, add the other cup. If still not sweet enough add more.
Chill for 1-2 hours.
Roll into 1″ round balls and place on WAX paper. Insert a toothpick into each ball. These will be used as your “handles” when dipping into the chocolate.
Chill again for about an hour.
Melt chocolate. If you cannot find dipping chocolate, use semi-sweet chocolate chips.
Dip balls and place back onto wax paper that has been LIGHTLY sprayed with Pam. Remove toothpicks.
Chill.
