Any fresh fruit can be used. WOW! All that fiber!
1/4 cup Butter
3/4 cup Sugar
1 large Egg
1 teaspoon Vanilla
1 1/4 cup(s) Flour
1 1/4 teaspoon(s) Baking powder
1/2 teaspoon Salt
1/2 cup Milk
3 cup(s) Fresh fruit
1/4 cup Flour
1/4 cup Sugar
1/4 cup Butter, chilled
Beat 1/4 cup butter and gradually add in 3/4 cup sugar. Beat well.
Add egg and vanilla, mix well.
Combine 1 1/4 cup flour with baking powder and salt.
Add to butter mixture alternately with milk, beginning and ending with the flour mixture.
Spoon this into an 8″ square, greased, baking dish.
Arrange fruit on top.
Combine 1/4 cup flour and 1/4 cup sugar.
Cut in chilled butter until crumbly.
Sprinkle over fruit.
Bake at 350 for 1 hour or test with toothpick.
Serve warm.
