This is a classic fruit pie. Use any ripe fruit that is in season. Because you are using whole fruits, you get lots of fiber….always good for the system!
3 1/2 cup(s) Fresh fruit
3/4 cup Sugar
3 tablespoon(s) Cornstarch
1 cup Water
1/4 teaspoon Cinnamon
1 teaspoon Lemon juice
1/8 teaspoon Salt
1 tablespoon Butter
1 Pie shell(s), 9″, baked
In large saucepan, combine sugar, 1 cup of fruit (I blend the fruit until smooth), cornstarch, salt, water cinnamon and lemon juice.
Cook over medium heat, stirring constantly, until thick.
Remove from heat and add butter and remaining fruit.
Mix until all fruit is coated.
Pour into baked pie shell and cool for 3 hours.
