These are my favorite! Baking the taters results in a very light, fluffy gnocchi. You can boil your taters as well……each way works fine.
Typically, these are served in place of pasta…..simply add your favorite spaghet sauce and some meat. Another serving suggestion is to simmer your favorite Italian sausage in plain tomato sauce for a couple of hours. The sausage will season the sauce. Pour over gnocchio and top with fresh, grated Parmesan cheese.
2 pound(s) Potato(s)
1 1/4 cups Flour
Bake and then rice the potatoes.
Gradually add the flour.
Knead until a smooth, manageable dough is formed…you may need to add a little more flour.
Roll this dough into long 3/4″ rope-like strings. Cut into 3/4″ lengths.
At this point you can freeze them or go ahead and cook.
Boil 4 quarts of salted water and add gnocchi.
Boil for about 3 minutes……they should rise to the surface.
Serve with sauce.
