Pork Rub
1/2 cup Soy sauce, dark
1/2 cup Sherry, dry
3 cloves Garlic, crushed
1 tablespoon Dry mustard
1 teaspoon Ginger
1 teaspoon Thyme
Rub loin or roast with your favorite pork rub.
Combine all other ingredients.
Marinate roast overnight.
Fire up the grill. Sear each side at 450º for 5 minutes each. Then move to Medium heat(350-400º) and cook for another 30-45 minutes. Turn a couple ot times during this.
Baste often with marinade.
Meat temp should be around 145-150º.
