This is nothing more than corned beef that is smoked instead of boiled. The spices are also a bit different. Very easy to do, especially if you buy the store bought beef that is already corned. Throw away the seasoning packet that comes with the store bought corned beef and substitute the spices below. That seasoning packet is designed to be used when you boil the traditional corned beef.
2 tablespoon(s) Peppercorns
1/2 tablespoon Coriander seeds
1/2 tablespoon Onion powder
1 teaspoon Thyme, dried
1 teaspoon Paprika
1 teaspoon Garlic powder
Soak corned brisket for 2 hours making sure to change the water every 15 minutes. If you skimp on this step, the meat will be far too salty and nearly un-edible.
Grind peppercorns and coriander seeds. Add remaining ingredients.
Rub this on the corned beef brisket.
Wrap and let sit overnight.
Slow cook brisket at 275º(uncovered) for about 1 1/2hr./lb.
Meat temps need to be near 185º or above.
