2 cups Flour
2 cups Oats, quick-cooking
1 teaspoon Baking soda
1/2 teaspoon Salt
2 sticks Butter, softened
1 cup Sugar, granulated
1 cup Brown sugar, light
2 large Egg(s)
2/3 cup Peanut butter, creamy
1 teaspoon Vanilla
12 ounce Chocolate, semi-sweet
1 cup Confectioner’s sugar
1/2 cup Peanut butter, creamy
1/4 cup Whipping cream or milk
Preheat oven to 350°
Stir together flour, oats, salt and baking soda.
Beat together butter and both sugars on medium speed until fluffy.
Add eggs, peanut butter and vanilla until smooth.
Stir in flour mixture 1 cup at a time.
Press dough into a 15″ x 10″ jelly roll pan and bake until firm, about 20-25 minutes.
Meanwhile, stir together confectioners sugar, peanut butter and cream.
Remove cookie base from oven and sprinkle with chocolate chips spreading as they melt.
Drizzle the sugar/peanut butter mixture on top of this.
Let cool and then cut into 1 1/2″ x 1″ bars.
