1-2 pound Pork, bite size chunks
1 large Onion(s), diced
3 cloves Garlic, crushed
1/3 cup Flour
1 teaspoon Allspice
1/2 teaspoon Black pepper
1/2 teaspoon White pepper
1 bottle Beer
2 cups Beef stock
3 tablespoons Cider vinegar
3 tablespoons Wine, red
1/2 cup Coffee
2 Carrot(s), chopped
4 large Potato(s), red
1 Bell pepper(s)
You can use any kind of pork you have on hand. Use a Dutch oven or slow cooker.
Cube the pork into bite sized chunks and then brown in a couple of tablespoons of oil. Add the onions and the garlic and cook for about 5 minutes.
Add the flour, allspice and both white and black peppers and cook for about 2 minutes making sure all the flour is absorbed.
Transfer to your slow cooker and add all the liquids plus the rest of the ingredients and cook all day.
Taste and adjust for seasonings…you will need to add some salt.
