3 pound(s) Potato(s), sliced
1 1/2 cup(s) Heavy cream
2 tablespoon(s) Butter
1/4 cup Shallot(s), minced
2 Garlic clove(s), minced
2 Bay leaf(s)
1 teaspoon Rosemary, dried
1/2 cup Cream cheese
1/2 cup Milk
1/2 teaspoon Paprika
Salt and pepper to taste
3/4 cup Parmesan, fresh, grated
Preheat oven to 350º and oil bottom of 2 qt. baking dish.
Place sliced potatoes in mixing bowl and add 3/4 cup of the heavy cream. Toss to mix and set aside.
Melt butter in skillet and saute shallots and garlic. Do not brown.
Add bay leafs and rosemary to skillet. Whisk in cream cheese, milk and remaining heavy cream.
Simmer, whisking constantly for 4 minutes or until smooth.
Add paprika and salt and pepper. Discard the bay leafs and pour over the potatoes and cream mixture.
Toss to coat and then arrange in baking dish.
Top with parmesan cheese and bake until tender.
